To continue our domesticated student lives, my flatmate, Laura, and I made soup. I looooove soup, it is so wholesome and delicious and, if made right, it can be super healthy.
I made two lots of soup; Broccoli and Potato and Spicy Butternut Squash.
Laura is a bit averse to the kitchen so we made the Broccoli and Potato soup together and I guided her through; she was surprised by how easy it was to make.
I tried Broccoli and Potato soup whilst on the cruise and thought it was divine so recreated it. The soup I made was much more tasty than the one on the cruise, if I do say so myself.
If you would like to make this delicious soup that constitutes approximately 2 of your 5 a day, you will need:
1 bunch of broccoli,
2 jacket potatoes,
1 onion
2 stock cubes
Oil
Hot water
Salt and Pepper
1. Chop the onion and slowly fry, with the oil, in a large saucepan. Allow to soften.
2. Chop the broccoli into small, bite-size pieces and throw in the pan.
3. Chop the potatoes into small pieces (as you would do for mash) and put them in the pan.
4. Dissolve the 2 stock cubes in boiling water and add to the pan. You want enough water to cover all the veg.
5. Bring to the boil. Once boiling, reduce the heat and allow it all to simmer for approximately 20 minutes.
6. Keep checking on the soup; when the potatoes are cooked (when you can put a knife through the potatoes easily i.e. they are no longer hard).
7. Season to taste with salt and pepper.
8. Blend all the ingredient using a food processor. I have a hand-held one that I can use directly in the pan. When it is smooth and lump-less, it is done!!
