I went for an Italian theme and started with a simple, yet beautiful bruschetta...
It was truly terrific and I must give some credit to my Italian flatmate who helped with the suggestion of ingredients. This is a perfect starter as it is fresh and light and leaves enough room for the following, indulgent courses.
To make my 'Best Bruschetta', you will need:
A french stick,
A good handful of cherry tomatoes,
1 crushed clove of garlic
A good glug of olive oil,
A good pinch of dried oregano,
A pinch of chilli flakes,
A sprinkling of parmesan.
Recipe:
Chop the cherry tomatoes into small, bite-size pieces and mix in a bowl with the garlic, olive oil, oregano and chilli flakes. Stir well and leave to one side for a few hours (if you can spare it) to allow all the flavours to mingle with one another.
Slice the French stick on a slant to give it a nice shape and spoon the tomato mixture on to the bread. Sprinkle with some grated parmesan and voilĂ ! you have the best bruschetta!
